 ** Preservation of Fruit and Vegetables (Basic skill programme- Craftsmen Training Scheme):-- 

Objective of the course - to impart necessary knowledge & skill to the trainees in the trade so that they are able to seek employment in the food processing industry, or become self-employed in the field.  

Trainee Entry level - candidate who has passed class 10th examination of 10+2 system with Physics, Chemistry & Maths or equivalent. 

Course Duration -  One year full time course. 

Course Contents :- Course covers topics like fruit beverages, canning of fruits & vegetables; making of pickles, chutneys, sauces etc.; spoilage in preserved fruits & vegetable, use & handling of related equipment, containers, preservatives, etc..  

Trainee Exit Level :- On completion of the course, the trainees are expected to be able to  

  • Prepare common fruit beverages;
  • can meat, fishes, poultry products, commercially important fruits & vegetables; etc. 
  • Preparation of Jams, Jellies, Pickles, Vinegar, Toffees, cheese, etc.
  • Estimation in fruits & vegetable of - acids, sodium chloride, Benzonic acid, reducing/non-reducing sugars, etc.
  • Microbial examination of canned food; etc.
  • Study & use some common equipment like Refracto meter, Hydrometer, Jelmeter, thermo-meter, vacuum gauge, pressure guage, seam checking guage, common balance, etc. 

The workshop, developed for this course, is equipped with common equipment like Refracto meter, Hydrometer, Jelmeter, thermo-meter, vacuum gauge, pressure guage, seam checking guage, common balance, etc. and various containers, knives etc.
